Black Bean and Mushroom Burger

Who can say no to a big, fat juicy burger which is healthy, hearty and which you can enjoy without worrying about your waistline? If your mouth started to water and started yelling YES YES YES involuntarily, then you need to hear me out. There is a new healthy vegan burger patty in town, which is made with black bean and mushrooms. Packed with protein, fiber, minerals and vitamins.

I actually had to try this a couple of times, yes yes the third time was the charm. First time I couldn’t form the burger patty, it was falling apart. The second time was able to make the burger patty without any issue but I didn’t like the taste of it. Finally was able to get the patty with the best texture and keep the flavor infused.

Ingredients

  • 01 cup of boiled black beans (drained)
  • 01 medium sized onion (diced)
  • 1/4 tsp of chili powder
  • 1/4 tsp  of cumin
  • 1/4 tsp of salt
  • 1/4 tsp of pepper
  • Few leaves of fresh oregano leaves
  • 01 chia egg ( 01 tbsp chia seeds + 03 tbsp water)
  • 02 tbsp of breadcrumbs

To cook mushrooms you need;

  • 1.5 cups of mushrooms
  • 1/4 tsp of salt
  • 1/4 tsp of pepper
  • 01 small onions (diced)
  • 01 small clove of garlic (minced)
  • Few curry leaves
  • 01 tbsp of soy sauce

You can make two burger patties with these ingredients.

Method 

First saute the mushrooms
◦ Rinse and drain the mushrooms and chop in to tiny cubes (about an inch).
◦ Heat up a skillet and add some olive oil. When the oil is heated add chopped garlic, onion and curry leaves and saute till it becomes light brown and aromatic.
◦ Then add chopped mushrooms, soy sauce, salt, pepper and cook for 04-05 minutes until mushrooms are tender.
◦ Once cooked keep it aside to cool down.

Now let’s the make the burger patty
◦ Add boiled black beans, cooked mushrooms, onions, chili powder, cumin, salt, pepper into a food processor and blend for few second. I didn’t make the mixture too smooth because I wanted a chunky burger patty. Ref the picture below for the texture of the mixture.

◦ Transfer the mixture into a bowl and add breadcrumbs, herbs and chia egg and give it a good mix.
◦ Divide the mixture into two and take one potion and form a burger patty. You can go with any shape you like. Repeat the same with the leftover mixture.

◦ Heat up a skillet in a medium heat and add some olive oil. When the oil it heated add the burger patties, flatten the patties using a spatula and cook for 03-05 minutes until golden.
